This past week I was hosting guests in Hayward, WI for our internet marketing meetings.  Internet marketing is the way of the future and I can’t learn enough, fast enough!  After an evening of meetings, a group of us went out to a local pizza joint.

About 10 minutes after we ordered the manager came out and said the pizza roller broke & they couldn’t make our pizza.  We asked why they couldn’t roll the dough by hand…the guy was a deer in headlights & said they couldn’t do it without the roller.  I said I could roll it out. Next thing you know I’m back in their kitchen rolling out our pizza!  I pulled out my pizza making skills (one of the people visiting me was the former head of R&D at Dominos!) and hand-tossed a great pizza if I don’t say so myself!

Don’t Quit!

Everyone has those days, including me!  In a series of events yesterday, which only can be explained with Murphy’s Law – my cell phone broke, I missed my flight…  I always remind myself -

DON’T QUIT

When things go wrong, as they sometimes will,
When the road you’re trudging seems all uphill,
When the funds are low and the debts are high,
And you want to smile but you have to sigh,
When care is pressing you down a bit,
Rest if you must, but don’t quit.
For life is queer with its twists and turns,
As every one of us sometimes learns,
And many a person turns about,
When he might have won if he’d stuck it out.
Don’t give up though the pace seems slow,
You may succeed with another blow.
Often the struggler has given up,
When he could have captured the victor’s cup.
And he learned too late when the night came down,
How close he was to the golden crown.
And you never can tell how close you are,
It may be near when it seems so far.
So stick to the fight when you’re hardest hit,
It’s when things seem worst that you must not quit!

I get asked this question all the time! I think it’s an absurd question…it’s almost like asking a father which is his favorite child! They are all my favorites and like a father, I love each one of just the same even though they are all different in their own way. My Rich & Sassy sauce reminds me of Chicago storefront barbeque joints and is great caramelized over a big slab of hickory smoked spare ribs. The Georgia Mustard sauce reminds me of the roadside smokehouses and it is “to-die-for” over charred juicy chicken. The Texas Pit sauce reminds me of the huge stockyard mesquite pits and is delicious over 24-hour slo-smoked beef brisket. And my Sweet & Zesty reminds me of the Missouri smokehouses found in the black hill country and you’ll be in hog heaven when you slather it over a smoky pulled pork sandwich topped with a dollop of zesty coleslaw! While these are my old standby sauces, I’m always experimenting and creating new sauces! This past Summer I produced a DVD, BBQ Pitmaster Secrets,on How to Make the Best Backyard Barbecue Ribs and Barbecue Sauce…I was like a kid in a candy shop creating new sauces with every day of filming…who knows what’s next!

I have had the honor of meeting the Pizza Lady!  Bev is author of Pizzeria Secrets – a DVD that teaches you to make pizzas at home.  She used to be head of R&D for Domino’s pizza and stayed up in Hayward this past weekend at our resort.

In a true chef fashion, I challenged her to a pizza cook-off!

The barbeque season is starting to fire up and that means lots of rib fests and competitions! Box prep, for the novices, is the look and placement of the ribs, barbeque sauce, and garnishes in the box you present to the judges. In some barbeque contests box presentation can be very important…it is the FIRST IMPRESSION on the judges. My advice for improving your box prep skills is…look up KCBS and find out when they are having judge certification classes. Take the judging class and then offer up your services at any BBQ contest you can get into as a judge. I have been a celebrity BBQ judge at many of these rib fests and barbeque contests and have picked up great ideas on how people box up their handiwork. I have seen some interesting artistic creations with the use of curly leaf lettuce, kale or parsley…remember to check the contest rules first some require that your barbeque speak for itself!

Nasdaq

Hi!… WOW!!! did I have an experience last wednesday… gave me goose bumps and almost brought me to tears. I got to ring the opening NASDAQ bell with our CEO Christopher O’Donnell, Diana Purcell CFO, Mark Lyso FBC, David Marks and David Lee franchise partner, and our new franchise partners- Jacob and Sammy Benmoha that just opened the most amazing Famous Dave’s right in Time Square! This was in honor of celebrating 15 years of being listing on NASDAQ…Christopher our passionate CEO gave a rousing opening speech from the heart…then we whooped it up, hollered, and cheered. Bob McCooey, Senior Vice President, NASDAQ OMX said if we were really loud that our stock would go up. So we gave it all we had…we whooped it up even more… and guess what?… our stock did go up!!! from

6.25 open to 6.45 at close and this is up from $2 back in the beginning of March. Pretty good for this economy I would say… Next we went out on to Time Square where there was a full color video on Famous Dave being played on NASDAQ’s 10 story TV screen that it was so huge all of Time Square was able to see it and all of the world. It was exciting to see everyone stop and look at the juicy ribs with flames dancing all around them and they were being slathered with our award winning Rich & Sassy Barbeque Sauce… got everyone hungry.

I had to think back to the 1st day back in Hayward, Wisconsin when we were peeking from behind the kitchen to watch our 1st customer take the 1st bite of soon to be world famous award winning slow smoked ribs. I would have never guessed that 1st bite would lead to Famous Dave’s being recognized as The Best Ribs in America! and being displayed 10 stories tall in Times Square!~ It just goes to show how important it is to never give up on your dreams and more importantly to never give up when things seem hopeless. I am so honored to be part of a winning team led by Christopher O’Donnell and even more excited for our future as we keep focused on our goal to be America’s Official

Barbeque Joint! America is truly The Land of Opportunity where a young Native American kid like myself can have a dream, work hard, and realize their dream come true. We live in a great country.

None of this would be possible if it wasn’t for our team members in our restaurants who strive every day to make the best award winning barbeque and deliver outstanding cheerful service to our guests. I’m sitting in my cabin, illuminated by the sterile cold blue light staring at me from my laptop…then looking up from my global connection…I am warmed by the lush green that is making my cabin’s patio windows glow from the much needed rain that has gently fallen all day.  Looking out over my shoulder, I am now looking through our lakeside windows, looking into the reflection of a calm glassy -like pristine lake blanketed with a wisy hint of lazy fog.  Everyting is northwoods beautiful.  The dark green evergreens contrast with the birches, maples, poplars, and oaks.  The forest has come alive.  The rain makes everything feel so clean and it mae me think about how nature just a few days ago was blowing up a storm all day… kind of like it was “sweeping.”  It made me wonder where does all the stuff blow to?  It’s like you never see the stuff all piled up somewhere.  The point being… everything looks fresh and clean right now.  Then I had an incredible thought…I need to tell folks about brushing their teeth with Listerine! After you normally brush your teeth with a good toothpaste and it really doesn’t matter what kind you use because brushing your teeth with Listerine afterwards is the best thing you can do for protectig your gums and teeth.  After you are all done brushing and you have rinsed the toothpaste from your mouth.  Rinse with a flavored Listerine, I like the Citrus flavored one, its not as nasty tasting.  BUT here’s the secret to great healthy teeth… next brush your teeth all over again with just the Listerine in your mooouth.  Spit this out and rinse with Listerine again.  Just this one added step will keep your gums looking beautiful and your teeth free from plaque and decay.

famous dave fry bread stand

In my later years to help make ends meet during the summer, my mom would take us kids to her reservation during the tribe’s annual Honor the Earth Celebration Pow-Wow.  This is a magnificent gathering of the tribes during the third week in July.  Indian families across the Midwest gather at the Lac Courte Oreilles Pow-Wow grounds and for four days they honor our mother earth through Indian dancing, feasts, and give-a-ways.  My mom always had an Indian Fry Bread Booth where she made Indian Fry Bread and served it with Venison.  She also made a wild rice soup that was so tasty people lined up at her food booth waiting for her soup to be done.  Today, we serve this tasty wild rice soup in all our Famous Dave’s restaurants.  Cooking at these Indian Pow-wows, I learned how to serve large numbers of people helping my mom cook and waiting on the long lines of hungry dancers and spectators.  This is where my passion for wanting to be in the restaurant business developed.

Think About This

Here’s something to think about… There are many people who are wondering what happened and they have no defenses to protecting what they worked so hard to build over their lifetimes… unfortunately they do not know how to reinvent themselves to take advantage of the great opportunities that are being created right now. Remember this… the thinking and the behavior that got you where you are today… will keep you living in the dark ages! You need to be reinventing yourself right now. You need to be thinking how you are going to learn more skills… because you need to become a bigger thinker tomorrow to go where you have never gone before because yesterday’s thinking is not what’s going to create your opportunities of tomorrow!

Personally, I am working longer hours on myself to learn more than I ever have at any one time in my life. We have all heard Abe Lincoln’s advice… “if I have 6 hours to chop down a tree, I am going to spend 4 hours sharpening my axe.” I have always believed that every hour you spend in planning or learning a new job skill that you will increase your productivity 4 fold. So my challenge to you… “how many of you are spending any time right now at home before you go to bed to increase your effectiveness?” Jim Rohn a great teacher and very successful entrepreneur say… “if you were to spend just one hour a day on becoming more knowledgeable about your craft… in 5 years, you will be in the top 1% of the people in your industry!”

I would encourage all of you to pass on anything that you are doing whether it is a best practice or even just a great thought… maybe even a good laugh… I would love to hear from you!
